Winemaking process
All our harvesting is done manually to prevent damage of berries. To preserve the wealth accumulated during the growth, at harvest we do a selective sort where altered grapes are removed.
After the delivery of grapes to the cellar, our pneumatic presses of last generation allow a delicate pressing which guarantee precisely flavours. The pressing is slow and gradual on whole grapes to avoid any risk of deterioration of stalks and skins and preserve fineness and neatness of grape juice.
A static settling to remove unwanted sections, a slow fermentation to optimize the aromatic expression, control of temperature, light filtration at the end of winter and aging on lees to allow each of our vintages grow naturally.
Only after a period of aging in varies winery according to varieties, what a lot of rich smells and varied flowers, fruit, spices, etc.. will hatch and will delight your palate when you will taste.
